Food and Wine

On our menu we change the dishes frequently and follow the season very closely. This means that the food changes from seasons to season. The food is accentuated by our 35 years of experience as craftsmen and are deeply rooted in the Danish tradition. Both of us have been raised with several courses of freshly cooked dishes at each meal and that is reflected in our food. We stand by our gastronomic heritance.

We seek inspiration for the menus in the big, rich Danish kitchen, but we are not blind to the world. We put great efforts in balancing the menus to give them a natural flow, both concerning taste, weight and structure.

Denmark is a country where all sorts of produce can be found. Fruit, vegetables, meat and especially fish and shellfish. It is impossible to place yourself more than 50 kilometres from the coast, so in our kitchen we serve lots of fish and shellfish.

The carefully chosen wines, which we serve by the glass, with each of our dishes, gives our guests the opportunity to taste different wines with each of the dishes on the menu. Our personal choice of wines matches each of the dishes and enhances the experience of both food and wine. We choose the wines with difference in both grape types and structure and of course the choice varies with the seasons so that the wines follows the menu in every respect.

We know that our choise of wines isn´t the final truth for all of our guests, so there are more than 1000 other possibilities on our winelist.
Restaurationens winelist is composedwith both width and vintage depth, so our guests don´t have to change producer, just becauce they would like a wine in another vintage. The wine producers are chosen to reprecent the best in each country and region, but also to show different ways of making wine. The winelist contains wines from the old world as well as the new

Our winelist is updated often, enabeling us to use small batches of wines and rareties, so that we constantly can present a fully updated winelist
